Pai Gow with 2-7 in the back should be feasible to solve. (Only 154M distinct hands.) But would that actually be of any interest, or is it a stupid game? (I'm assuming regular Pai Gow is pretty well solved, though the Wizard of Odds gives a strategy which improves on the typical 'house way' slightly, so a full strategy might be of some interest.)

Maybe it would be better to look at a three-card/three-card game or a three-card/five-card game. Five and five is not actually all that much more feasible than full three-hand Chinese Poker.
